Ingredients:
- Chicken feet: 12
- Lemon: 1
- Small green peppers: 6
- Slim green peppers: 2
- Onion: 0.5
- Ginger: 5 slices
- Garlic: 6 cloves
- Spring onion: 1 stalk
- Light soy sauce: 8 tablespoons
- Vinegar: 6 tablespoons
- Oyster sauce: 1 tablespoon
- Sesame oil: 2 tablespoons
- Salt: to taste
- Sugar: 1 small spoon
- Cooking wine: 2 tablespoons
Instructions:
- Trim the nails off the chicken feet.
- Separate the chicken feet into three or four pieces each.
- Boil a pot of water, add chicken feet, 1 small spoon of salt, 2 tablespoons of cooking wine, a spring onion, and a few slices of ginger to remove any unwanted odor. Boil for 12 minutes.
- While boiling, chop garlic, chillies, slice onions, and deseed the lemon.
- After boiling, rinse the chicken feet and soak them in cold water (add ice cubes for a chewier texture).
- In a large bowl, mix 8 tablespoons of light soy sauce, 1 tablespoon of oyster sauce, 6 tablespoons of vinegar, 2 tablespoons of sesame oil, 1 small spoon of salt, 1 small spoon of sugar, and 2 tablespoons of cooking wine.
- Add lemon slices, garlic, chillies, onions, and ginger to the bowl, stir well.
- Place the cooled chicken feet in the sauce, mix well, cover with plastic wrap, and refrigerate for at least two hours. Stir occasionally for better marination.
