Refreshing Cucumber and Black Fungus Salad – Perfect for Summer

Ingredients:

  • Cucumber: 2
  • Black fungus: 1 handful
  • Roasted peanuts: 1 handful
  • Cilantro, green onions, minced garlic, small green chili: 1 tablespoon each
  • Light soy sauce: 3 tablespoons
  • Vinegar: 2 tablespoons
  • Oyster sauce: 1 tablespoon
  • White sugar: 2 grams
  • Salt: 2 grams

Instructions:

  1. Slice the cucumber into small pieces and soak the black fungus in hot water until softened.
  2. Prepare the dressing: In a bowl, combine 1 tablespoon each of minced garlic, green onions, sesame seeds, chili powder, and small green chili. Pour in hot oil, followed by 3 tablespoons of light soy sauce, 2 tablespoons of vinegar, 1 tablespoon of oyster sauce, and a pinch of sugar and salt. Mix well.
  3. Blanch the black fungus and remove from water. Cut the cucumber into small sections, add cilantro, roasted peanuts, and pour in the dressing. Mix everything thoroughly.
  4. Enjoy this incredibly refreshing and flavorful cucumber and black fungus salad!
