Ingredients:

For the Dough:

  • Whole wheat flour: 75 grams
  • High-gluten flour: 175 grams
  • Water: 165 grams
  • Brown sugar: 15 grams
  • Salt: 2.5 grams
  • Yeast: 2.5 grams
  • Milk powder: 15 grams
  • Butter: 15 grams

Filling:

  • Cream cheese: 120 grams
  • Sugar: 12 grams

For Topping:

  • Black sesame seeds: 10 grams
  • White sesame seeds: 10 grams
  • Pumpkin seeds: 10 grams
  • Almond slices: 10 grams
  • Oat flakes: 10 grams

Instructions:

Making the Dough:

  1. Combine all the dough ingredients except butter in a mixing bowl.
  2. Mix the dough until it becomes smooth and starts forming gluten. Then add softened butter and continue mixing.
  3. Mix until the dough forms a semi-transparent film with good extensibility.

Basic Fermentation:

  1. Shape the dough into a round ball, cover with plastic wrap, and let it undergo basic fermentation.
  2. Ferment the dough until it doubles in size. Poke a hole in the dough; it should not shrink or bounce back.

Shaping and Filling:

  1. Divide the fermented dough into 6 equal portions, about 75 grams each.
  2. Roll each portion into a ball and let them rest for 15 minutes, covered with plastic wrap to prevent drying.
  3. Prepare the filling by mixing cream cheese and sugar until smooth.
  4. Transfer the cream cheese filling into a piping bag.

Decorating the Surface:

  1. Prepare the mixture of black sesame seeds, white sesame seeds, pumpkin seeds, almond slices, and oat flakes.

Assembly:

  1. Roll out each piece of dough into a rectangle of approximately 18×9 cm.
  2. Pipe a line of cream cheese filling along the dough.
  3. Roll up the dough from top to bottom.
  4. Spray water on the surface, then roll it in the mixture of multigrain toppings to evenly coat the surface.
  5. Place the prepared rolls on a baking sheet, leaving some space between each, and let them undergo final fermentation.
  6. Ferment until the rolls are 1.5 times larger.

Baking:

  1. Preheat the oven to 180°C (356°F).
  2. Bake for approximately 15 minutes until the surface is golden brown and crispy.
