Ingredients:
For the Dough:
- Whole wheat flour: 75 grams
- High-gluten flour: 175 grams
- Water: 165 grams
- Brown sugar: 15 grams
- Salt: 2.5 grams
- Yeast: 2.5 grams

Filling:
- Cream cheese: 120 grams
- Sugar: 12 grams

- Black sesame seeds: 10 grams
- White sesame seeds: 10 grams

- Almond slices: 10 grams
- Oat flakes: 10 grams
Instructions:
Making the Dough:
- Combine all the dough ingredients except butter in a mixing bowl.
- Mix the dough until it becomes smooth and starts forming gluten. Then add softened butter and continue mixing.
- Mix until the dough forms a semi-transparent film with good extensibility.
Basic Fermentation:
- Shape the dough into a round ball, cover with plastic wrap, and let it undergo basic fermentation.
- Ferment the dough until it doubles in size. Poke a hole in the dough; it should not shrink or bounce back.
Shaping and Filling:
- Divide the fermented dough into 6 equal portions, about 75 grams each.
- Roll each portion into a ball and let them rest for 15 minutes, covered with plastic wrap to prevent drying.
- Prepare the filling by mixing cream cheese and sugar until smooth.
- Transfer the cream cheese filling into a piping bag.
Decorating the Surface:
- Prepare the mixture of black sesame seeds, white sesame seeds, pumpkin seeds, almond slices, and oat flakes.
Assembly:
- Roll out each piece of dough into a rectangle of approximately 18×9 cm.
- Pipe a line of cream cheese filling along the dough.
- Roll up the dough from top to bottom.
- Spray water on the surface, then roll it in the mixture of multigrain toppings to evenly coat the surface.
- Place the prepared rolls on a baking sheet, leaving some space between each, and let them undergo final fermentation.
- Ferment until the rolls are 1.5 times larger.
Baking:
- Preheat the oven to 180°C (356°F).
- Bake for approximately 15 minutes until the surface is golden brown and crispy.
