Ingredients:

Crust:

  • Crushed Oreo cookies: 50g
  • Butter: 20g

Yogurt Layer:

  • Yogurt: 150g
  • Whipping cream: 50g
  • Milk: 30g
  • Granulated sugar: 10g
  • Gelatin sheets: 8g

Purple Sweet Potato Layer:

  • Mashed purple sweet potato: 60g
  • Whipping cream: 50g
  • Milk: 100g
  • Gelatin sheets: 5g
  • Granulated sugar: 10g

Instructions:

  1. Prepare Gelatin Sheets: Soak gelatin sheets in cold water beforehand.
  2. Prepare Crust: Crush Oreo cookies and mix with melted butter. Press the mixture into a 4-inch high-rimmed mold. Refrigerate.
  3. Yogurt Layer: Heat yogurt until it reaches around 50 degrees Celsius. Add soaked and melted gelatin sheets, strain, cool, and pour into the mold.
  4. Purple Sweet Potato Mash: Steam purple sweet potato and mash it. Add whipping cream, milk, and granulated sugar. Mix well.
  5. Filter Purple Sweet Potato: Strain the mashed purple sweet potato to get a smoother texture.
  6. Prepare Purple Sweet Potato Layer: Heat the mixture of purple sweet potato, milk, and soaked gelatin sheets. Cool and pour into the mold.
  7. Set and Chill: Allow the dessert to set and chill.
  8. Unmolding: Apply a warm towel to the outside of the mold and gently remove the dessert.
  9. Slice: For a neater cut, heat the knife before slicing.

Tips:

  • The filtered purple sweet potato mash will result in a deeper color. Adjust the sugar quantity according to your taste.
