Ingredients:

  • Cucumber: 1
  • Eggs: 3
  • Shrimp: 5

Instructions:

  1. Clean and slice the cucumber thinly. Beat the eggs. Remove the shells and devein the shrimp, then chop them into shrimp paste.
  2. Marinate the shrimp paste in a bowl: Add 1 tablespoon of cooking wine, 1 tablespoon of black pepper, and 1 tablespoon of cornstarch. Stir vigorously in one direction until well mixed.

Cooking Steps:

  1. Heat oil in a pan and fry the beaten eggs until cooked. Remove from the pan.
  2. In the same pan, leave a bit of oil and sauté scallions and ginger.
  3. Pour in an appropriate amount of water and bring it to a boil. Add the shrimp paste and cook until it floats.
  4. Add the beaten eggs and cucumber slices. Cook for about 3 minutes.
  5. Finally, season with a tablespoon of salt, sprinkle with chopped green onions, and it’s ready to serve!
