Ingredients:
- Cucumber: 1
- Eggs: 3
- Shrimp: 5
Instructions:
- Clean and slice the cucumber thinly. Beat the eggs. Remove the shells and devein the shrimp, then chop them into shrimp paste.
- Marinate the shrimp paste in a bowl: Add 1 tablespoon of cooking wine, 1 tablespoon of black pepper, and 1 tablespoon of cornstarch. Stir vigorously in one direction until well mixed.
Cooking Steps:
- Heat oil in a pan and fry the beaten eggs until cooked. Remove from the pan.
- In the same pan, leave a bit of oil and sauté scallions and ginger.
- Pour in an appropriate amount of water and bring it to a boil. Add the shrimp paste and cook until it floats.
- Add the beaten eggs and cucumber slices. Cook for about 3 minutes.
